Dressing up dosas

Couple of weeks back, as I was reading my daily quota of news on Google, I came across this article on dosas. I was quite surprised to see our plain old dosas getting prime-time on WSJ. The article screamed “Move over tortillas, dosas are a-coming!”.

Anyway, proud as I was of the attention our dosas were getting, I forwarded the link to friends and family. And this led to an email exchange with one of them on how the dosas morph in our kitchen. That gave me an idea and I decided to share the different avatars dosas take in my kitchen. Without counting the plain dosas with chutneys and milagai podi (although literally means chilli powder it isn’t quite that).

a) Use dosa as a wrap and stuff it with a dry roasted mixed vegetable sabji (called as “kari” – not the same as curry – by tamilians). The traditional one is, of course, made with potato and called “Masala Dosai”, but you can use any vegetable or combination of them, optionally with paneer, to make a dry sabji, with any spices of your choice, and use it as stuffing.
b) Make a mean paneer burji or even chilli paneer for a more protein filled meal.
c) Make a pizza or quesadilla out of dosa by adding cheese and jalapenos (or red chilli flakes). You can also add slightly roasted veggies to make it a complete veggie dosa-pizza. This can be either served open, like a pizza, or closed, like a quesadilla.
d) A trick that I picked from my MIL – when you have just a few ladles of batter left, add a handful or two of rava (semolina) to the batter, add chopped ginger, onion (optional), green chillies to make (onion) rava dosa. Of course, you can use this as a base and stuff veggies, paneer etc.
e) When the batter is fairly old and heavily fermented, make uthappams (thick dosas) with it. Add chopped tomatoes, chillies, onions on top for a colorful veggie uthappam.

Go green with spinach

Circa 2003. Those were early days of blogging and Route 79 was one of those early blogs that I use to read regularly. Written by a second generation Indian from Britain, he used to write about myriad topics including food. He chronicled a lot of authentic Punjabi recipes coming straight from his kitchen and were not as oil-masala loaded as the restaurant dishes. Given our love for spinach (spinach masiyal, the South Indian preparation of spinach is a staple in our house), it is no wonder that we love Saag and I never quite mastered the art of making it, till I found the fool-proof way in Route 79’s kitchen. I have made this recipe several times and it has turned out well every single time without any mishaps. This is my entry for Your Recipe Rocks event started by Madhu for this month.

Balanced Breakfast

I am so not a morning person, and cooking in the morning is a daunting task for me. So, our breakfast almost always is toast with Almond Butter (and / or Fruit Preserves), or else oats with berries and almonds. There are quite a few traditional Indian breakfast foods that are hearty and eating them in the morning provides a wholesome, delicious way to start the day, e.g. Pongal, the protein-packed adai or parathas. As much as I would love to eat a delicious home-cooked breakfast, I usually abhor stepping into the kitchen in the AM. This is the norm… And then, there are days when you break the norm and today was one such day. Paneer Paratha. I had some left-over paneer in the fridge from the Chilli Panner and Mansi’s WBB event, originally started by Nandita of Saffron Trail, enticed me into cooking for breakfast.

Chilli Paneer

We are a set of 4 desis in almost adjacent houses, and we meet on various occassions, at the drop of a hat – if there is none, we create one. To cut a long story short, we have forged great friendships over the years and I am really grateful for having such great friends/neighbors. Couple of weeks ago, we decided to meet for a farewell dinner for my friend’s mom who was visiting them from Chennai. It was my turn to host and I decided on the cuisine and menu too – it was to be Chinese, or rather Desi-chinese – every true-blooded Desi that I know loves Desi-chinese and am yet to find one who doesn’t. This was to be a potluck pary and Gobi Manchurian, Chilli Paneer, Hakka Noodles and Veg. Fried Rice were on the menu. I chose to make Chilli Paneer.

This dish, a deadly combination of paneer cooked in desi-chinese style, is something that I have always liked and wanted to make. This party provided the perfect opportunity to try it out. Tarla Dalal has a great recipe for chilli paneer and I also found Sig’s Chilli Chicken recipe quite interesting. I kind of married the two and made my own recipe – don’t we all do that?

Wraps galore

Flatbread with some kind of filling makes a wrap. Flatbreads are found almost in every cuisine in the world and hence wraps come in all sizes and flavors.

They are a good low-carbohydrate alternative to traditional sandwiches. Although, it has been around in Mexican cuisine for over a hundred years, it has become immensely popular in the recent years with the plethora of diets that restricts the carbohydrate intake.
