Twin paths to a delectable tofu

Tofu, a food that resembles paneer or cheese, is formed by curdling soy milk with a coagulant, usually edible gypsum or nigari. Tofu has been in use from 200 B.C. when a zealous cook stumbled upon tofu by chance when he added nigari (magnesium chloride, found in ocean water) to flavor the soy milk. This reminded me of the origin of dulce de leche – seems to me that a lot of tasty foods were created more by accident than design 🙂

Tofu is available in soft(silken) and firm varieties. Soft tofu is easy to blend, and is used in a lot of vegan desserts and soups, whereas firm tofu retains shapes well, and is used in stir-fry, grilling and baking. Tofu is rich in protein, and hence a good source of protein for vegetarians and more so for vegans. It is also widely believed that the spread of Buddhism, which preached strict vegetarianism helped the spread and popularity of tofu. The health benefits of tofu are enormous, including but not limited to its cardiovascular protection and anti-cancer properties. While there are a lot of benefits to tofu, it contains goitrogens which interfere with the functioning of thyroid glands. You might want to go easy on tofu, if you have (or suspect) thyroid issues.

Grilled Tofu

Ann Gentry, a popular chef and restaurateur, makes a lot of tofu-based dishes in her show, Naturally Delicious. I saw her grilling marinated tofu and definitely wanted to try as both of us are tofu-philic.

Tofu cut into 3″x 2″ x 1/4″ pieces – 6
Tamari or Soy sauce – 4 tbsps
Peanut Butter – 1 tbsp
Dark Sesame Oil – 2 tsp
Chilli Sauce – 1 tsp
Minced ginger & garlic – tsp each

Combine all the ingredients except Tofu well in a mixing bowl to form the marinate. Marinate tofu in this mixture for atleast 8 hours.

Grill the marinated tofu in a hot grill pan for atleast 5 mins on each side.

Baked Tofu

Alternatively, you can also broil the tofu in the oven for about 5 mins on each side (watch carefully so as to not burn the tofu).

The grilled / baked tofu can be used in several ways. To name a few:

  • Can be diced and added to salads / wraps
  • Serve as an appetizer with peanut sauce
  • Used as a patty (or filling) in burgers and sandwiches

    Love the way you integrate interesting tidbits about the food itself in your post. The tofu looks tempting. Not sure I will try this at home though.

    the tofu looks like a magical conversion when marinated, seems like a lot of effort needs to be put in for this.

    Come on girl! This is not that difficult, all you need to do is a little planning, so you can marinate it for 8 hours 🙂 – A-kay

    I never thought of grilling/broiling it. Would definitely give it a try.
